Your local health food store’s “raw cashews” are not necessarily raw cashews. If they were, they would contain urushiol, the same toxin contained in poison ivy. The “raw” cashews you see at farmers markets and supermarkets have been steamed to eliminate the deadly chemical.

Only a handful of raw cashews can cause serious allergies in most people, but it can be fatal for those who are especially allergic to poison ivy.
