High Protein Cupcakes

1.5 cup low fat peanut flour
½ cup stevia
1 tsp baking soda
Pinch of salt
4 tsp unsweetened cocoa powder
1 tsp vanilla extract
½ cup water
2 tbsp coconut oil
4 egg whites


1. Mix all of the dry ingredients well with a mixer or wooden spoon first then add in all your liquid ingredients. It should be brown and smooth, free of lumps.
2. Bake at 350 F for 15-17 minutes.
