Caramelised Apples with Cinnamon Walnuts & Cottage Cheese

2 apples, cored, cut in half
2 tsp stevia
4 tbsp walnuts, chopped
2 scoops whey protein
½ tsp cinnamon
1 cup fat free cottage cheese (refrigerated)
2 scoops whey protein
1 tbsp stevia
1 tsp coconut oil


1. Heat oven to 350 degrees F.
2. Place the apple halves in a baking tray (facing upwards) with ½ cup of water in the bottom.
3. In a bowl, combine the rest of the ingredients except the cottage cheese, protein powder and the 1 tbsp stevia.
4. Stuff the mixture into the apples so that they are well packed and place in the oven for 35-40 minutes or until soft.
5. Remove from the oven and serve with cottage cheese mixed with stevia and whey.
